Dédicace - "Incontournables" range.
Sweet white wine, 100 % Chenin Blanc - Appellation Touraine Contrôlée.
Created from grapes produced by organic cultivation certified ECOCERT SAS F.32600.

Terroir : First slope of Toucheronde.
The soil is made up of windblown sand over argilo-calcareous formations.

Harvesting : By hand, with sorting and selection grape by grape.

Vinification : The grapes undergo long pressing to extract remarkably fine juice.
Fermentation takes place slowly, over the space of a year, and is followed by 6 months’ maturing in vats.

Character : Straw yellow in colour, with hints of gold. The nose combines seductive aromas of candied fruits, dried figs, honey and quince. A rich and concentrated palate of exceptional fullness. The wine’s remarkable and refreshing balance of sweetness and acidity is a true delight.

Sampling : Served at between 8 and 10°C, "Dédicace" is a remarkable wine. It makes a fine aperitif, and also goes perfectly with foie gras.

Storage :
20 years and over.

Blanc de Blanc - "Incontournables" range.
Sparkling white wine, 50% Chenin Blanc, 40% Menu Pineau, 10% Chardonnay.
Appellation Touraine Contrôlée.
Created from grapes produced by organic cultivation certified ECOCERT SAS F.32600.

Terroir : La Bocagerie plateau and first slope of Toucheronde.
The soil is made up of windblown sands over argilo-calcareous formations.

Harvesting : y hand.

Vinification : The grapes are pressed very carefully to extract a juice of absolute limpidity. After cleaning, fermentation takes place naturally at 18°C.

Character : After ‘assemblage’ (blending) and drawing off, the second fermentation takes place in bottles shelved in tuffeau cellars for a minimum period of 18 months, producing an elegant sparkling wine with delicate bubbles.
When their time in the cellars is done, the bottles are turned on wooden stands.
After the bottles have been degorged, a secret liquid ingredient is added and corks are put in.

Sampling : Brilliant in colour, with a fine mousse.
Refined nose with aromas of fresh fruits (peaches). A creamy and highly refreshing attack on the palate, followed by complex and delicate hints of fruitiness.

Storage : from 6 to 8 years.
